Ken Mudge - Forest Cultivation of Shiitake and Other Edible and/or Medicinal Mushrooms

Kenneth will discuss log acquisition and inoculation with fungal spawn, incubation, fruiting, and harvest of edible and medicinal mushrooms. Ken Mudge is a professor emeritus at the Department of Horticulture, Cornell University and co-author of the book Farming The Woods, An Integrated Permaculture Approach to Growing Food and Medicinals in Temperate Forests.

Chris will build on Terry Durham's "Growing Elderberry for Health and Profit" Savanna Institute Nutshell presentation taking it forward into that amazing plant's potential commercial future, Midwest Elderberry Cooperative's role in that future and how that can benefit elderberry growers, including those for whom elderberry is not a primary crop. As founding director and President of the Midwest Elderberry Cooperative and CEO of River Hills Harvest Marketers, LLC, Chris brings extensive knowledge about marketing shelf stable finished products for the River Hills Harvest brand throughout the Midwest and expanding nationally.

Leah Penniman - Black Agroforestry: From the "jaden lakou" of Haiti to the "Fanya juu" of Kenya.

Leah will discuss how Black farmers have innovated agroecological systems for millennia. Learn how farmers at Soul Fire Farm and their sibling organizations are implementing and honoring these practices. Leah Penniman is a Black Kreyol educator, farmer/peyizan, author, and food justice activist from Soul Fire Farm in Grafton, NY. She co-founded Soul Fire Farm in 2011 with the mission to end racism in the food system and reclaim our ancestral connection to land.
